The first weekend of fall is here, and it calls for something warm, comforting, and just a little bit sweet. Nothing says autumn quite like a velvety butternut squash soup.

This Creamy Maple Butternut Squash Soup is a perfect way to welcome the season, featuring roasted squash, a touch of cinnamon, and the cozy richness of crème fraiche. It’s simple to make, nourishing, and exactly what your table needs as the air begins to crisp.

What You’ll Need:

Ingredients:

1 large butternut squash (or 2 small), cut lengthwise

Salt, to taste

½ cup milk (plus more if needed)

½ cup crème fraiche

2 oz. maple syrup

1 tsp. cinnamon (plus more to taste)

Fresh nutmeg, for garnish


Instructions:

  • Preheat oven to 350°F. Cut the butternut squash lengthwise, sprinkle lightly with salt, and place cut-side down in a baking dish.

  • Roast for 30–60 minutes, until tender all the way through.

  • Let cool slightly, then scoop out and discard the seeds. Scoop the flesh into a large pot over medium-low heat.

  • Add ½ cup milk and ½ cup crème fraiche. Using a hand blender, blend until smooth and creamy. Add more milk as needed to reach your desired consistency.

  • Stir in maple syrup and cinnamon, blending again. Taste and adjust with more salt, cinnamon, or maple syrup if desired.

  • Ladle into bowls and finish with a sprinkle of freshly grated nutmeg.
